Bandeja Paisa Recipe from Colombia

Ingredients

  1. Red beans 1 cup - dried
  2. Pork belly 200 grams - cooked
  3. Ground beef 200 grams -
  4. Chorizo sausage 1 -
  5. Avocado 1 -
  6. Fried egg 1 -
  7. Rice 1 cup - cooked
  8. Plantains 1 - ripe
  9. Corn arepas 2 -
  10. Lemon wedges to serve - (Optional)

Instructions

  1. Soak the red beans overnight and cook them until tender.

  2. In a large skillet, cook the pork belly until crispy.

  3. In the same skillet, brown the ground beef and cook the chorizo.

  4. Fry the plantains until golden.

  5. Prepare the rice as per instructions.

  6. Assemble the dish by placing rice, beans, meats, fried egg, plantains, avocado, and arepas on a large plate.

  7. Serve with lemon wedges.
